One of my favorite (and most used) websites is definitely allrecipes.com. Even though it’s not yet fall, I found a recipe for Autumn Acorn Squash that I have been wanting to try! As usual, I made my own version of the recipe I found based on what I had in the kitchen and personal preference. Brad is very picky when it comes to anything including vegetables, but after this meal he said he was completely sold on acorn squash!
Autumn Acorn Squash
ingredients
1 medium acorn squash
1/2 pound ground turkey
1/2 cup chopped, peeled tart apple
1/2 cup Craisins
1/4 cup chopped celery
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Italian seasoning mix
1/4 teaspoon pumpkin pie spice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
shredded cheddar cheese
directions
Preheat oven to 350 degrees.
Cut squash in half and discard seeds; place face down in a baking dish and cook for about 20 minutes.
In a skillet over medium heat, cook turkey until no longer pink; drain.
Add apple, cranberries, celery, salt, Italian seasoning, pumpkin pie spice, onion and garlic to the meat in the skillet and cook for an additional 5 minutes.
Remove squash from the oven and flip it over in the baking dish.
Spoon mixture into squash halves; sprinkle desired amount of cheddar cheese on top.
Cover and bake at 350 degrees F for 10 minutes. Uncover; bake 10 minutes longer or until the squash is tender.
Makes 2 servings.
