Looking for a simple and quick recipe that uses some of those yummy garden-grow tomatoes and cukes plus is a delicious complement to many meals? This salsa is one of my favorites! It is great simply scooped up on some tortilla chips and amazing with steak, chicken or fish!
Tomato Cucumber & Avocado Salsa
Ingredients
1 medium English cucumber, seeded and diced
1 medium firm-ripe avocado, peeled, pitted, and diced
1 medium tomato
juice of a lime
salt
pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chili powder
1 tablespoon cilantro
a pinch of Cheyenne pepper
Directions
Combine all the ingredients in a medium bowl and toss gently to combine. Serve within an hour or preparing.
Note
I’ve made this salsa many times, but not always the same way. The recipe above is based on my usual pantry and garden staples, but you can also include items like 1 seeded and finely chopped jalapeño pepper in lieu of Cheyenne pepper or 1 finely chopped red onion in lieu of onion powder. Of course, fresh herbs are always better!
